Acclaimed chef Steph Moon returns this summer for another series of Sky Dining events, with a brand new seven course menu for diners to savour. Guests will indulge in the unique fine dining experience, served 100 metres above sea level, surrounded by the Tower’s incredible night-time views. In this blog series, Steph will take us through each course to share her culinary inspiration.
Course number two: Amuse
Terrine with pine nut basil pesto, Bloody Mary with Twisted Nose wasabi vodka, Isle of Wight tomato layers with whipped Hampshire Tunworth cheese
“Tomatoes – wow, where to begin?! The Isle of Wight has some of the best tomatoes in Europe! That is why many of the London chefs buy their tomatoes from there rather than Italy. I am very excited to start the evening off in a real sunshine way – nothing will do this better than three small tasters of tomato.
The terrine promises to be vibrant whilst the Bloody Mary Twisted Nose Wasabi vodka will really pack a punch. It’s certainly very flavoursome and I love it as it is a cheeky and fun drink whilst staying super tasty. Finally, the layers of the tomatoes with the whipped Tunworth cheese which is really delicious and creamy will round off the Amuse course.”
