Sky Dining inspiration: Main Course

Acclaimed chef Steph Moon returns this summer for another series of Sky Dining events, with a brand new seven course menu for diners to savour. Guests will indulge in the unique fine dining experience, served 100 metres above sea level, surrounded by the Tower’s incredible night-time views. In this blog series, Steph will take us through each course to share her culinary inspiration.

Course number five: Main course

Buckwells of Southsea beef fillet, braised brisket and beef hash with potato pastille, Hampshire watercress and baby vegetables

“John Buckwells of Southsea is really one of Portsmouth’s real characters and what a dedicated guy. No wonder he has won best butcher in Hampshire this last year. He has sourced me some cracking beef and the slat beef for my beef hash garnish has come over from the Isle of Wight. Serving beef fillet, hash and slow braised main course, it has been a challenge to “Lighten it up” but believe it or not, the hash is light and the baby vegetables adds freshness and summery flavours.  The watercress is a particular treasure – it is really exciting for me as last year, I learnt Hampshire was famous for its watercress and you will see why when you try this!”
