Sky Dining inspiration: Canapés

Acclaimed chef Steph Moon returns this summer for another series of Sky Dining events, with a brand new seven course menu for diners to savour. Guests will indulge in the unique fine dining experience, served 100 metres above sea level, surrounded by the Tower’s incredible night-time views. In this blog series, Steph will take us through each course to share her culinary inspiration.

 

Course number one: Canapés

Solent Sea Bass, crushed fresh peas, yuzu gel

Parsonage farm charcuterie with Southsea soda bread and Pinks chutney

Golgappa of new season potatoes with Hampshire mint and tamarind

New Forest Wild Boar mini kofta with roasted fresh peach

 

“The canapé course is great fun and designed to get people talking and interacting. What better place to do this than on the Harbour-side overlooking the sea where your Sea Bass came from! The Sea Bass and Yuzu is really Hampshire meets Japan!

 

The Parsonage Farm team cure up a great selection of meats and we have done something quite radical by asking them which meats they would feature on this menu rather than telling them what we want. They will see the menu and surprise us with their recommendations based on their extensive product knowledge. Along with Pinks Chutney, this little morsel will set the taste buds tingling.

 

The Golgappa is another touch of Asian influence and great fun as it comes with a little tamarind shot.


Finally, Wild Boar from the New forest- who knew?! Peach and boar will really pair well but this is a new dish for me as I have never cooked with British Wild Boar before so I am looking forward to that.”
